Easy Sausage & Cheese Quiche Recipe

I am a big fan of a good quiche. It’s a quick and easy breakfast, lunch, brunch, dinner….really anytime, meal, all in one. If you want to make it even more of a meal, it’s easy to slap a little salad on the side and call it a complete dinner.

I also love how quick and easy they are to make! Here’s my no-fail recipe for a sausage and cheese quiche.

Ingredients:

  • 6 breakfast sausage links, sliced

  • 5 whole eggs

  • 1/2 a bell pepper, any color, chopped

  • 1/2 a medium onion, chopped

  • 1 pie crust — homemade or from a package

  • 1/4 cup milk

  • 3 ounces shredded cheddar cheese

  • Salt and pepper to taste

Directions:

In a frying pan, saute bell pepper and onion until soft. Add sausage and season to taste, cooking fully. Remove from heat and allow to cool for 5-10 minutes. It doesn’t need to be cold, just cooler than piping hot. In a separate bowl, whisk eggs and milk together until no more chunks of white remain. Add the sausage mixture to the egg mixture and stir. Place pie crust in pie pan. Spoon the filling inside, and top with cheese. Bake at 350 degrees for 45 minutes. Slice and serve, or keep in the fridge covered for up to a week.
